The winemaking process for the Blanc de Noirs Grand Cru involves using juice from the first pressing only, with the majority of the wine being vinified in stainless steel tanks. A small proportion (15-20%) is aged in used oak barrels to enhance the complexity of the blend. The champagne spends three years on the lees before being disgorged and aged for a minimum of six months in the cellar. Like all Maison Bruno Paillard Champagnes, the Blanc de Noirs Grand Cru is an Extra-Brut with a dosage of 3 g/l, with the disgorgement date clearly indicated on the back label.

Upon tasting, the Blanc de Noirs Grand Cru showcases a chiseled structure and freshness, with notes of saline, umami, rose petals, red cherries, grapefruit, timut pepper, and kumquat, culminating in a harmonious and elegant finish.
